Sweet Lemony Garlic Shiitake Sauté with Coconut Rice
This recipe was born out of all those quite evenings of needing something savory on the palate but not really into a whole kitchen production. When you melt into the stillness for hours on end eventually you do get hungry, so having a happy healthy go to is always a perfect necessitiy. It's simple to make and comes together in no time at all. Actually, the small commitment gives you a chance to be mindful in motion....to move your body, move your hands in a synchronized way so as to feel like you're floating. Now some of you may read this and think WHAT?? And I'm like haha, no seriously, try it. Just still your mind, turn off the TV and move your body slowly as if your were engaged in a yoga flow. I'm sure by now you've seen many people doing this, you know those personalized flows out on social media. Just approach cooking in this moment with a similar flow filled mindset. You might actually find it suits you and that in motion cooking becomes a must in all your creative kitchen productions. Here's what you'll need to get started...
1/2 cup Basmati Rice
1/2 cup full fat canned Coconut Milk
3/4 cup Water
5 Shiitake Mushrooms
First start by adding the Basmati Rice, Coconut Milk and Water to a sauce pan with a pinch of Dill and Himalayan Salt. Give it a stir to incorporate the ingredients then heat on high and bring to a bubbling boil. Reduce heat to low, give it quick stir then cover with a lid for 10 minutes. Remove from heat, give it another quick stir and let set for 10 more minutes. All done.
For the Lemony Garlic Shiitake Sauté start by slicing the Mushrooms. Add to a sauté pan with Olive Oil, Lemon Juice, Maple Syrup, Garlic, Dill and Himalayan Salt. Give it a quick whisk. I don't list measurements here because it's literally a freestyle moment. Add each ingredient to your liking. There's no way to get it wrong. I did add a little bit of flour just to thicken it up but seriously design the ingredients to your taste. Coat the Shiitakes with the sticky sweet glaze and heat till the Mushrooms are tender.
