Whole Tangerine + Almond Cake

A few years ago I happened upon a recipe for a Whole Tangerine Almond Cake and have been completely smitten ever since.  It uses simple ingredients yet delivers HUGE flavor.  Your friends will seriously think you labored over this one.  The recipe is a simplified version of the classic Sicilian Clementine Cake made popular by Nigella Lawson…both equally tasty.  Whole ingredients… Tangerines, Almond Meal, Cane Sugar, Eggs.  It doesn't get much better.  And definitely a great option for when you're craving something sweet but want to stay true to your healthy eating progress.  A little sweet layered with a big dose of antioxidants jam packed with lots of protein (over 100g for the whole cake).  Now that's my kind of treat:)

And the really cool thing about this cake is...it can be cut to accommodate up to 32 people.  Great for parties.

3 tangerines(you're looking for 1 cup of puree)

3 eggs

3 cups almond meal

1 cup cane sugar

1 tsp baking powder

powdered sugar for sprinkling (optional)


Wash Tangerines and place in a sauce pan with cold water(just covering the tangerines).  Bring to a boil and let simmer for 15 minutes.  Remove Tangerines and discard water.  Fill sauce pan one more time with cold water and again bring to a boil and simmer for 15 minutes.  This process helps soften the citrus peel as well as remove bitterness.  You've now completed the longest stretch of creating this sweet filled master piece.  Place Tangerines on a large plate and slice up removing any seeds as you go then transfer entire plate contents, juice and all, to a food processor and blitz away till puree is formed(you may have to scrape the sides down a few times).  Set your oven to 350 and butter a 9 inch round.  Set aside.  In a mixing bowl combine Sugar and Eggs together till you achieve a creamy consistency.  Add remaining ingredients…Tangerine Puree, Almond Meal, and Baking Powder.  Give it a quick run just to combine.  Remove mixing bowl from mixer and use a spatula to give another quick turn, making sure all ingredients are incorporated.  Pour into prepared 9 inch round.  Place in oven for 50-60 minutes.  When toothpick comes out clean you're all set.  Let cool for at least 10 minutes before transferring to a cake plate of choice.  Let cool completely before cutting(this might be this hardest direction to follow).  Sprinkle the top with a little Powered Sugar or ALOT as you can tell in my photos.  Hey, I got creatively overzealous.  The cake itself isn't very sweet so the Powered Sugar adds a tiny bit more, you can tailor the amount to your liking.  ENJOY:)
